It all begins with a meticulous focus on sourcing quality ingredients. At San Primo Brewing Company, we take pride in handpicking the finest all-natural black tea and green tea blends, along with locally sourced and home-grown fruits. These carefully selected components play a vital role in creating our exceptional Kombucha. They are thoughtfully integrated into the brewing process at precisely the right moment, ensuring the perfect balance of flavors and aromas. SEASONAL TEA BLENDS

Kombucha has been traditionally brewed using black teas throughout the ages. Some decades ago it was found that green teas could also be included along with the black teas without endangering the SCOBY nor sacrificing the final product. We have developed an optimal blend of black and green teas, which eb and flow throughout the seasons just as we do. The blend receives more black tea than green during the colder months, which aids in circulation at a time when it tends to be slower. As the days warm up the blend cools down, finding a closer balance between the black and green teas. Our mother SCOBY always receives some level of black teas in the blend because black tea has been oxidized longer than green and provides more of the compounds and nutrients that the kombucha culture thrives on. This provides her with the best nutrients in order to produce the best brew for our bodies.

FIRST FERMENTATION

During the initial fermentation process, our team at San Primo Brewing Company carefully infuses our small-batch Kombucha with a blend of sweetened tea. This deliberate step is crucial in providing nourishment to our treasured traditional living SCOBY, ensuring its vitality and allowing our Kombucha to flourish with the wealth of wholesome nutrients we hold dear. By indulging in our Kombucha, you not only embrace the path to wellness but also contribute to the maintenance of a vigorous and fit physique.

SECOND FERMENTATION

Our flavor combinations are done in the traditional way, using real fruit which has been pureed, juiced, or freshly pressed depending on the fruit and the season.  These are combined with our classic raw kombucha and allowed to second ferment at room temperature until optimal carbonation has been reached.
