What is Kombucha?

An ancient health beverage of fermented tea full of enzymes, probiotics, and organic acids, legend holds that it was originally discovered in Manchuria, China in 221 BCE. It then migrated to Japan, Russia and Germany, and from there, to the rest of the world. Cheers to a healthier you with Kombucha!

OUR STORY

We began brewing kombucha more than 10 years ago in the United States, where we fell in love with this effervescent drink in its most authentic form. We became obsessed with knowing everything we could about the best practices of brewing and second fermentation, about its origin, and of course the multitude of health benefits. When we came to Europe in 2016 we knew that our beloved SCOBY would be coming too. We made sure to package her up with just enough liquid to make it through security in our carry-on snack bag and one of our first stops upon our arrival was to get a brewing vessel and everything necessary to get a new brew started. Since then our SCOBY has been carefully attended to all over Europe, including in the pre-alps of northern Italy where the dream to start sharing our brew began and where the name, San Primo Brewing, was born. It was at the foot of this mountain that we designed our logo and let our dreams run wild. A global lockdown and the years of uncertainty that followed would see this dream be put on hold until we landed here on the beautiful Island of Madeira, where we are blessed to be able to share our family run passion project with all of you!

Seasonal Tea Blends

Kombucha has been traditionally brewed using black teas throughout the ages. Some decades ago it was found that green teas could also be included along with the black teas without endangering the SCOBY nor sacrificing the final product. We have developed an optimal blend of black and green teas, which eb and flow throughout the seasons just as we do.

Second Fermentation

Our flavor combinations are done in the traditional way, using real fruit which has been pureed, juiced, or freshly pressed depending on the fruit and the season.  These are combined with our classic raw kombucha and allowed to second ferment at room temperature until optimal carbonation has been reached.
